Great point about trying to use an episode/segment that you don't have memorized as a canon-check--it's the whole "can't see the forest for the trees" problem. dS is kind of difficult to do that with since there are so few episodes and I think a lot of us have watched them repeatedly (they're highly rewatchable), but still, there are some sections we've only watched 10 times as opposed to 100. :)
And yes, about inconsistent canon; one of the awesome things about fic is that we can try to reconcile that sort of thing, and ultimately, I think that's probably the best solution (what Sage was saying above about justifying a character's inconsistent behavior via, well, wanking, essentially--hee). But I also agree that as long as your character is grounded in some strong canonical expression, so that your readers go "oh, you made me see the character in a new way" rather than "that felt really OOC," you've done your job.
