Ah yes, the everpresent Brit vs US spelling. I've had betas where the only thing they kept pointing out was that I used 'ou' instead of 'o' in spelling. That's so very... helpful... not.
I tend to choose beforehand what I want to do in a story. If I write from Fraser's POV, I tend to lean toward Brit spelling and word choices, if I write RayK, I tend to lean toward US. I try not to mix it too much, because it's stuff like that that will catch my eye when I'm reading a story, and interfere with the flow of the story. Even moreso, when people write Ray's accent/dialect heavier than necessary. It kind of derails my reading *g*
